I am creating a project with customized fonts (because of the licenses of the fonts, there is no need to worry, they allow commercial use and redistribution).

The point is that I do not want to embed it as such, I want to link it, put that typeface in the texts of my program and with a creator of SETUP (inno setup for example) I want to have the fonts installed in the system, in this way to be installed and to open my program, look as I created it. The above mentioned works, but Am I allowed to do this? Or are the terms only talking about Microsoft's fonts and leaving out third-party fonts?

If you can distribute third party sources in your software while they have some type of distribution license, as long as you include the terms and distribution license included in the licenses of the sources which covers point (ii) the part of Claims of law, the points mentioned in the clause only apply to Germany and Austria:
